Since then, the Sabatini brothers’ flair and excellence have led to 2 other Sabatini Ristorante Italiano restaurants around the world, including this fine dining room at The Royal Garden. Here, an authentic yet creative menu is prepared by experienced chefs and is served in a picturesque “countryside” setting.
My visit: My favorite season is finally upon us! White truffle season! So I decided to revisit Sabatini at the Royal Garden Hotel to try their white truffle offerings.
We started off with the proscuitto and melon as our appetizer. A simple enough dish but the condition of the ingredients are crucial. The Sicilian melon was sweet and full-flavoured but was still firm enough to have some texture. The ham was freshly cut from the middle of the leg.
The scampi risotto contained plenty of scampi. The fish flavour was present throughout the whole risotto dish and the rice was creamy with a little bite.
Now the star of the evening – the homemade tagliolini with Alba white truffles. White truffles have a delicate earthy, garlicky aroma and need a simple background. The truffle butter and aged parmagiano sauce was perfect; full of flavour but not over powering.
For dessert, we ordered a couple of cakes from the hotel’s cake shop. The green apple cheesecake was presented as an apple, the white chocolate outer shell opened to reveal a deconstructed cheesecake. As a surprise, there is a layer of apple gelee with morsels of cooked apple hidden under the light and airy cream cheese.
The napoleon was tiled with mango flesh, layers of puff pastry filled with sweet-scented custard cream. It was a delight to my taste buds from the first bite.
Verdict: Sabatini is certainly one of the most reliable Italian restaurants in town. It doesn’t get more classic than this. The rustic and cozy environment and live music is perfect for small family gatherings and dates.
